Add the chicken and veg
: Fold in red pepper, corn, beans, zucchini and shredded or diced cooked chicken.
Assemble bowls
: Divide the mixture between two microwave-safe containers. Refrigerate up to 3 days.
Heat & finish
: When ready to serve, sprinkle with cheese, and microwave for 2–3 minutes until piping hot and melted.
Top & enjoy
: Add a little extra salsa, coriander, avocado, and a spoon of Greek yogurt or sour cream before serving.
Notes
Protein swap: Use shredded rotisserie chicken for a shortcut, or swap in turkey, low fat beef mince, or tofu crumbles or cubes.
Cheese choices: Cheddar is classic, but Monterey Jack or mozzarella melt beautifully too.
Veggie swaps: mushrooms, spinach, grated carrot or riced cauliflower depending what you have on hand
Budget-friendly: Use frozen corn, canned beans, and pre-shredded cheese to save time and money.
Low-spice: Dial back the taco seasoning or use mild salsa if heat isn’t your thing.
Make it ahead: Assemble bowls in advance in microwave proof containers, then you have a yummy high protein meal in just a few minutes.
Double up the recipe - You will have four meals, one for today and three to enjoy over the next three days!
Add crunch: A sprinkle of crushed tortilla chips adds an extra dimension to the meal.
