Ingredients
1large egg
¼ cupGreek Yogurt
2Tablespoonswhey protein powder(vanilla)
¼ teaspooncinnamon
1teaspoonstevia
pinch salt
2slices bread
Instructions
In a bowl combine the egg, Greek yogurt, protein powder, cinnamon, vanilla, stevia, and salt. Whisk until smooth and well combined.
Soak the bread: Pour the mixture into a shallow dish. Dip both sides of the bread slices into the custard, allowing them to soak for at least 30 seconds per side.
Pan-fry: Heat a little butter or oil in a nonstick skillet over medium heat. Once hot, add the soaked bread and cook for 2–3 minutes per side, or until golden brown and cooked through.
Serve: Top with Greek yogurt, berries, nut butter, or a drizzle of maple syrup — whatever suits your body and life!
Notes
No stevia? Use maple syrup, honey, granulated sugar or your preferred sweetener.
No whey? Try collagen or plant-based protein, though texture may vary.
No yogurt? Use cottage cheese or milk – it will be thinner but still works.
Bread swap: Use gluten-free, high-protein, or wholemeal — whatever suits your needs.
Stale bread is perfect, maybe even better, as it can hold more of the French toast batter without falling apart.
Let the bread soak – Don’t rush this step; you want the custard to really absorb. The more that is soaked into the bread, the more protein-packed each slice of toast is!
Make it a meal prep – Double the recipe and reheat slices in a toaster, air-fryer or pan.
